Pasta with Fresh Cherry Tomatoes and Basil

Ingredients

  • 1 lb pasta (your choice)
  • 3 tbsp extra-virgin olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, sliced
  • 1 lb cherry tomatoes, halved
  • 1 cup fresh basil leaves, torn
  • Salt, to taste
  • 1 cup grated Parmigiano

Instructions

  1. Boil a large pot of well-salted water.
  2. Meanwhile, in a large saucepan, sauté the onion and garlic in the olive oil until softened.
  3. Add the tomatoes, basil, and salt. Cook until softened, about 10 minutes.
  4. Gently crush the tomatoes with a fork or potato masher.
  5. Boil the pasta until al dente. Reserve 1 cup of pasta water, then drain.
  6. Add the pasta to the sauce in the saucepan.
  7. Toss with Parmigiano and a bit of the pasta water until the pasta is coated.

Notes

  • Use high-quality olive oil for best flavor.
  • Add red pepper flakes if you want a little heat.
  • This dish is best served immediately.
