Pancake

  • AP flour: 150 g
  • Spelt flour: 50 g
  • Baking powder: 8 g
  • Baking soda: 8 g
  • Salt: 6 g
  • Sugar: 30 g
  • Milk: 280 g
  • Egg: 100 g (about 2 eggs)
  • Lemon zest (optional): zest of 1/2 lemon
  • Lemon juice: 30 g
  • Cider vinegar: 10 g
  • Vanilla extract: about 1 g
  • Melted butter: 60 g

Basic Method

  1. Whisk dry ingredients together in a bowl.
  2. In another bowl, whisk milk, eggs, lemon juice, cider vinegar, vanilla, and melted butter.
  3. Combine wet and dry ingredients until just mixed; do not overmix.
  4. Rest batter briefly, then cook on a preheated lightly greased skillet until golden on both sides.
