Pancake
- AP flour: 150 g
- Spelt flour: 50 g
- Baking powder: 8 g
- Baking soda: 8 g
- Salt: 6 g
- Sugar: 30 g
- Milk: 280 g
- Egg: 100 g (about 2 eggs)
- Lemon zest (optional): zest of 1/2 lemon
- Lemon juice: 30 g
- Cider vinegar: 10 g
- Vanilla extract: about 1 g
- Melted butter: 60 g
Basic Method
- Whisk dry ingredients together in a bowl.
- In another bowl, whisk milk, eggs, lemon juice, cider vinegar, vanilla, and melted butter.
- Combine wet and dry ingredients until just mixed; do not overmix.
- Rest batter briefly, then cook on a preheated lightly greased skillet until golden on both sides.
