Teriyaki Chicken Recipe

Ingredients

  • 1 1/4 lbs boneless skinless chicken breasts, diced (1-inch cubes)
  • 1 tbsp olive oil
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup water (or 2 tbsp water + 2 tbsp mirin)
  • 2 tbsp honey
  • 1 1/2 tbsp packed light brown sugar
  • 1 tbsp rice vinegar
  • 1/4 tsp toasted sesame oil
  • 2 tsp minced fresh ginger
  • 2 tsp minced fresh garlic
  • 2 tsp cornstarch
  • Sesame seeds and green onions (optional)

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Cook chicken until browned (about 3 to 4 minutes per side), then continue until the center reaches 160°F.
  3. While the chicken cooks, whisk together all sauce ingredients.
  4. Pour sauce over chicken and cook until thickened, about 30 to 60 seconds.
  5. Serve warm, garnished with green onions and sesame seeds if using.
