Classic Coleslaw

Ingredients

  • 1 cup mayonnaise
  • 1 1/2 tbsp apple cider vinegar or white vinegar
  • 1 tbsp honey
  • 3/4 tsp celery seeds
  • 1 tsp Diamond Crystal kosher salt (or 1/2 tsp Morton kosher salt)
  • 1/2 tsp freshly ground black pepper
  • 1/2 medium green cabbage, very thinly sliced (about 4 cups)
  • 1/2 medium red cabbage, very thinly sliced (about 4 cups)
  • 2 medium carrots, peeled and julienned or grated

Basics

  1. Whisk mayonnaise, vinegar, honey, celery seeds, salt, and pepper to make the dressing.
  2. Add both cabbages and carrots, then toss until evenly coated.
  3. Chill before serving for best texture and flavor.
  4. Optional make-ahead: prepare up to 8 hours ahead and keep refrigerated.
